Pumpkin Crunch


Easy and Delicious!

1 box yellow cake mix

1 cup melted butter or margarine1 tsp cinnamon

1 (15 oz) can pumpkin (about 2 1/4 cups, give or take)

½ tsp salt

1 (12 oz) can evaporated milk

3 large eggs (4 medium)

1 ½ cup sugar

½ cup chopped pecans (optional)

Cool whip/whipped topping or ice cream

Preheat oven to 350 degrees. Grease bottom of a 9x13 pan or 2 pie dishes. In a large bowl combine pumpkin, evaporated milk, eggs, sugar, cinnamon and salt (instead of using cinnamon and salt, you can substitute with 2 tsp pumpkin pie spice if needed).


Pour into pan. Sprinkle dry cake mix evenly over pumpkin mixture. Top with pecans (I have never done this since we are not nut lovers, but I think it had nuts in it the first time I tried it, so it is good either way). Drizzle melted butter over pecans.


Bake for 50-55 minutes or until golden brown. (My oven cooks faster and it only took about 35-40 minutes. Just check it after 30 minutes. It should be brown on top. Cool. Serve chilled with cool whip or ice cream.

Note: After I pour the butter over top, I usually spoon the butter over parts of the dry cake mix that didn't get covered with butter to make it more evenly distributed.

Yum! This is a perfect treat to try this weekend!

Yield
3 dozen cupcakes

Ingredients
1 (12 oz.) container Cool Whip
3 doz. mini Chocolate Cupcakes, (see recipe, below)
72 mini chocolate chips
36 regular chocolate chips
Preparation
Fit a pastry bag with a plain round tip (or use a plastic bag with a corner snipped off). Fill bag with Cool Whip. Pipe cream into peaks on each cupcake.

Position two mini chocolate chips as eyes and one regular chocolate chip as a mouth on each ghost, flat ends facing out. (Cupcakes may be refrigerated for up to 3 hours. Bring to room temperature before decorating.)

We made these a few years ago, they were fun and tasty! Enjoy!

Parents
Always know where your children are.

Always tell your parents where you are going.

Remember anything weird that an adult says or does to you and tell your parents immediately.
Run away from people who offer you candy or other treats or want you to help look for their puppy or kitten.
Scream, run and fight if anyone tries to grab you or make you to go with them.
Don't play in areas that you are unfamiliar with.
Stay on well-lit streets and always use the sidewalk. If there is no sidewalk, always walk facing traffic.

Now we are Cooking!


Ham and Cheddar Supper Waffles
Cost per serving: 92 cents

Heat up the waffle iron to create a dinner the kiddie's will love. Ham and cheddar make it substantial; serve with a drizzle of maple syrup or top with tomato salsa. These freeze well, so make more than you need. 4 Servings I usually double or triple the recipe and throw the rest in the freezer!
Ingredients
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon sugar
1/4 teaspoon salt
1 1/2 cups milk
1 large egg, lightly beaten
4 tablespoons unsalted butter, melted and cooled
2 ounces thinly sliced ham, chopped
1 cup shredded sharp Cheddar
Preparation
Heat waffle iron. Whisk together flour, baking powder, sugar and salt in a large mixing bowl. Stir milk, egg and butter into flour mixture until just combined. Fold in ham and cheese.

Mist waffle iron with nonstick cooking spray. Pour about 3/4 cup batter onto iron and spread to edges with a spatula. Cook until waffles are golden, 8 to 10 minutes. Repeat with remaining batter, misting iron with cooking spray as needed. Serve immediately.
